Michelin 3-star Hyotei Promotion

Grand InterContinental Seoul Parnas will be welcoming Chef Takahashi Yoshihiro, head chef of the legendary Michelin 3-star restaurant Hyotei in Kyoto, Japan. To celebrate the first anniversary of Hinotsuki, Chef Takahashi is scheduled to visit from October 23 to 26. This marks his first-ever participation in an event in Korea, drawing significant attention and anticipation.
This special promotion at InterContinental Parnas will showcase the 450-year history of Hyotei through authentic Kyoto-style kaiseki cuisine. Hyotei is a renowned Kyoto-based kaiseki restaurant with a rich history, starting as a teahouse at Nanzen-ji Temple during the Edo period, and continuing to uphold its esteemed traditions. Since 2010, Hyotei has maintained its prestigious 3-Michelin-star status for 16 consecutive years.
Chef Takahashi, the 15th head of Hyotei, carries forward his family’s legacy while adding contemporary flair to the essence of kaiseki cuisine. His dishes, including the signature Hyotei Tamago, reflect the changing seasons and the colors of nature, preserving Kyoto culinary depth while pioneering new horizons in Japanese gastronomy through constant innovation. Respecting traditional kaiseki, he also actively adopts modern cooking equipment to create his own signature style. Chef Takahashi has also contributed to the global recognition of Japanese kaiseki cuisine through projects such as developing the first-class menu for ANA Airlines and collaborating with renowned chef Alain Ducasse.
Kaiseki cuisine originates from Japan’s traditional tea ceremony, emphasizing seasonal ingredients to express the essence of each season, and achieving aesthetic perfection through delicate preparation and presentation. Each course embodies a philosophy of harmony with nature. Notably, the kaiseki omakase served at Hinotsuki features creative reinterpretations utilizing seasonal ingredients and aligns with modern culinary trends emphasizing sustainability, earning widespread popularity among customers.
Hinotsuki is a fine dining restaurant specializing in authentic Kyoto-style kaiseki omakase, offering a variety of courses crafted from seasonal ingredients and artisanal techniques that deliver a fresh and sophisticated gastronomic experience. The invitation of Chef Takahashi represents a significant milestone: the historic Hyotei with its 450-year legacy and Hinotsuki, a front-runner in spreading the culture of kaiseki within Korea, sharing the same stage in Korea for a special collaboration.
