Kyoto kaiseki is a refined culinary tradition passed down from Kyoto, Japan's thousand-year-old capital, based on a deep understanding and respect for nature and ingredients.
To convey the subtle flow of the seasons to our guests, we designate a ten-day period for each season during which the most exquisite seasonal dishes are served, prepared with the rarest ingredients that are only available during that time.
